Recipe: Sweet Potato Galette

Ingredients:

For the filling:

  • 200g sweet potato, peeled and thinly sliced

  • 200g potato, peeled and thinly sliced

  • 150g fresh spinach, washed and chopped

  • 100g feta cheese, crumbled

  • 100g shredded cheese (cheddar or mozzarella)

  • 3 eggs

  • 2 cloves garlic, minced

  • Salt and pepper to taste

For the crust:

  • 200g all-purpose flour

  • 100g cold unsalted butter, cubed

  • 1/2 teaspoon salt

  • 4-5 tablespoons cold water

OR

  • 2 sheets of store-bought puff pastry (thawed according to package instructions)

  • Flour for dusting

Instructions:

  1. Prepare the crust:

    • In a food processor, combine the flour, cold butter, and salt. Pulse until the mixture resembles coarse crumbs.

    • Gradually add cold water, 1 tablespoon at a time, and pulse until the dough comes together. Form a disc, wrap in plastic wrap, and refrigerate for 30 minutes.

  2. Prepare the filling:

    • Preheat the oven to 200°C (400°F).

    • In a mixing bowl, toss the sweet potato and potato slices with a bit of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 15 minutes or until slightly tender.

  3. Sauté the spinach:

    • In a pan, sauté the minced garlic until fragrant. Add the chopped spinach and cook until wilted. Remove from heat and set aside.

  4. Whisk the eggs:

    • In a large mixing bowl, whisk the eggs with a pinch of salt and pepper.

  5. Ready your crust:

    • Roll out the chilled dough on a floured surface to a 12-inch circle. Transfer it to a parchment-lined baking sheet OR layer the 2 sheets of semi-thawed puff pastry on top of each and roll out to a larger rectangle

  6. Mix your filling:

    • In a large mixing bowl, combine the roasted potato, sweet potato, spinach, feta and half the shredded cheese with the whisked eggs. Mix thoroughly.

  7. Assemble your galette:

    • Pour the contents of the mixing bowl into the centre of the pastry and spread out, leaving a 2-inch border around all edges.

    • Sprinkle the remaining shredded cheese on top.

  8. Fold and bake:

    • Gently fold the edges of the dough over the filling, creating a rustic border.

    • Bake in the preheated oven for about 25-30 minutes, or until the crust is golden brown and the filling is set.

  9. Serve:

    • Allow the galette to cool slightly before slicing and serving.
